With the appearance of fresh strawberries at the farmer's market and road side stands, it is never too early to begin thinking about food preservation. A series of classes have been scheduled through the summer at our office. The first of these workshops will be held on June 26, from 1 until 4 pm. During this hands on workshop we will talk about canning Fruits and Fruit Juices and learn how to preserve them using the hot water bath. The second workshop will be July 10, 1 - 4 pm, and we will make some soft spreads (jam, jelly, etc.) and pickles. July 17th is the 3rd workshop and we will use the pressure canner to can vegetables. The last one is August 14, 1 - 4pm we will learn how to preserve meat by using the pressure canner. Pre-registration and a fee of $15 is required for each of these classes, and space is limited, so call Maryann at 828/884-3109 to have your spot saved for these workshops.
